Viticulture 92 % of the fruit was from a select Hawke’s bay vineyard. This vineyard was stony and free draining. The fruit had superb flavours at maturity. The remaining fruit was Semillon off our Taradale vineyard. These are old 36 year old vines on their own roots. This fruit was picked very ripe, into May, at 24 Brix.
Winemaking The grapes were pressed gently and only free run juice selected in the blend. The barrels were a mixture of new (17%), one, two and three years old. A strict barrel selection was made for the final blend. The wine includes 8% Semillon from our old vine Taradale block, harvested very ripe at 24 Brix. This was to give the wine further weight, complexity and age-ability.
Tasting Notes The colour is pale yellow with green tints. On the nose there is spice, lime, guava and some pineapple notes. The palate is bone dry, showing fresh acidity. The fruit is good on the palate and leads to a full, clean and long, dry finish. This is a classical barrel-aged style ideally suited towards a good food match.
Cellar Potential This Sauvignon Blanc will become a little softer over the next year or two. It will develop interest and complexity for up to 10 years.
