Gentle handling and attention to detail are the hallmarks of our winemaking. We handpick our grapes, then de-stem and lightly crush them to just break their skins before they go into the fermenting vats. The fermenting wines are carefully controlled to maximise gentle tannin extraction and extended post ferment maceration allows us to achieve a balance between fruit intensity and tannin structure.
The 2010 Syrah was basket pressed and spent 24 months maturing in small oak barrels, 30% new oak. Only 275 cases of this wine were made to ensure the quality remained up to our highest standards.
Vintage – 2010 An outstanding Syrah vintage
The growing season kicked off relatively early in September 2009.
The weather in spring was variable with particularly cold periods in October. The unsettled weather continued through early summer and it was not until February that Hawke’s Bay finally enjoyed consistently warm dry conditions. These conditions were excellent for flavour development in our grapes. Picking was late April due to an exceptionally dry Indian Summer.
Very dark dense inky colour with purple highlights. The bouquet is full and packed with aromas of dark fruits combined with black pepper, spice and liquorice that gives intrigue and character to Unison Syrah. A full bodied concentrated wine, the palate is full with flavours of dark plums, and black berry fruits. Layers of spice and black pepper mingle with dark chocolate and cedar. Enjoy with Venison, Duck, Game, Lamb or Pork. Also be decadent and try with some 70%+ cocoa chocolate. Cellar 8-10+ years.
