Gentle handling and attention to detail are the hallmarks of our winemaking. We handpick our grapes, then de-stem and lightly crush them to just break their skins before they go into the fermenting vats. The fermenting wines are carefully controlled to maximise gentle tannin extraction and extended post ferment maceration allows us to achieve a balance between fruit intensity and tannin structure.
The 2007 Selection was basket pressed and spent 12 months maturing in small oak barrels. Our Selection is carefully selected at blending from Cabernet Sauvignon, Syrah and Merlot, to be the best possible expression of our vineyard in each vintage. We set the standards for our Selection extremely high and it is only blended in good vintages. After blending the wine was transferred to our traditional Italian Botti for a further 14 months to enable the different components to harmonise and the tannins to integrate. The 2007 selection was released in March 2011 following a year’s aging in bottle.
Vintage – 2007 An exceptional vintage
An exceptionally warm, dry summer with long fine days at the height of summer. A gentle dry autumn allowed fruit to be picked at optimum ripeness producing wines of intensity, complexity and finesse. Many Gimblett Gravels winemakers see this vintage as the best the region has produced to date.
Deep ruby red colour. The 2007 has intense aromas of ripe black plums, black currant, liquorice, allspice and cardamom. Lifted and powerful on the palate where the complex warm flavours explode and linger. The firm, fine structure will allow the wine to continue developing under good cellaring conditions.
