Whole-cluster pressed to minimise extraction of phenolics. After overnight settling, the juice was racked off gross lees. Fermentation was with selected yeast in stainless steel at low temperatures to retain its vibrancy. It was handled very gently at all times to keep some CO2 spritzig in the wine to maintain freshness.
