This distinguished Cabernet Sauvignon was made from ultra-premium grapes grown on eighteen year old vines in our Mere Road Vineyard, located in the celebrated stony Gimblett Gravels district of Hawke’s Bay.
The grapes were handpicked at ideal physiological ripeness and balance on 27th April at 23.4° Brix.
The fruit was destemmed, retaining whole berries which were cold-soaked for two days then inoculated with selected yeast. The cap was plunged twice daily throughout ferment, until dry.
This opulent Cabernet Sauvignon, with its dark brooding presence, exudes distinctive blackcurrant and dark cherry characters, laced with aniseed, mint and mocha. Silky smooth tannins and ageing in quality oak contribute magnificent structure and length. A highly distinguished Cabernet Sauvignon, it is ready for immediate enjoyment, or to greatly reward cellaring.
