Maven 2008 Pinot Noir was harvested from several carefully selected sites each contributing specific attributes to the wine. Soil types range from alluvial shingles with very low fertility to shallow clay loams over shingle. All the vineyards are subjected to rigorous canopy management to maintain tight controls on yield and quality.
The fundamental principle of winemaking for this Pinot Noir is gentle fruit handling. The fruit is hand-harvested and de-stemmed, not crushed, into small open-to-fermentation tanks, lightly chilled for 7-10 days and allowed to soak for colour and flavour extraction. The fermentations start spontaneously, and tanks are plunged 3 times daily by hand. When fermentation is complete the wine is pressed to small French Oak barrels for maturation.
Deep dark ruby red in colour with shades of purple at the edge. The aroma is a complex array of red fruits, toasty oak and forest floor. The palate is firm with rich black plum and chocolate overtones. Barrel-aging has enhanced the spicy notes of this wine.
