Viticulture Great grapes should make great wine and therefore our vineyard is where we do most of our winemaking. Low cropping vines with high leaf to fruit ratios enable us to create ripeness, concentration and complexity. Tasting grapes on a daily basis means we can make the perfect picking call, the most important decision in the grape-growing and winemaking process.
Winemaking With all our wines we let the fruit decide the style of wine we make. Then we pick, press, ferment, filter and bottle. It really is that simple. They key is growing great grapes, picking them on the right day and having an awesome winemaker to add some more magic. Cool 10 degree fermentation to keep the goodies in the tank and always checking the wine to make sure it’s healthy. Finally we blend all the bits that go well together.
