Vineyard & Region: Barossa Valley
Colour: Deep red brick with purple edges.
Bouquet: Aromas include cherry, mocha and smoky oak with subtle hints of licorice and eucalyptus.
Palate: Abundant in flavour, this rich, warm palate is packed with ripe berry and spicy fruit characters. A deep/long flavour with structure and plenty of grippy tannins.
Winemakers Comment: Shiraz is made with soft handling to preserve the delicate primary fruit and extract only soft tannins. Grapes are fully destemmed and gently crushed with some whole berries. Fermentation occurs in open concrete fermenters which are hand plunged and pumped over twice daily. Pressed in an airbag press when at 2 Baume and fermentation finished in all new French and American oak barriques and hogsheads. Racked three times and left to mature in the same barrels for a further 18 months.
